What should I provide to start the project?
I need Wire-Frame, Sketches (optional), or complete detailed documentation about your app where I can understand each and every functionality of the app.
What Software/Tool you use to do UI?
Software I use: Photoshop - XD - Illustrator - Figma - Sketch. But my personal recommendation is Adobe XD. It's the best for UI.
