No, I do not make changes to a theme instead I use layered CSS / Child theme technique with which you do not lose changes even after updating theme or plugin and you will have more control in WordPress dashboard.

Sorry! No, I do not fix site over team viewer or without having access to the site because it takes longer to fix than usual and sometimes code work and sometimes it doesn't. So it better to have admin access for faster and accurate results.
