What login credentials will be needed to do work?
I will need WP Admin panel login of your website with Admin access.
Where will be custom code added? Will it be safe to update plugin to new version?
I will add code to Function Editor module of WP All Import / WP All Export plugin itself. And yes, it will be safe to update plugin to new version without loosing custom code.
Will I need a staging/development setup for this to test?
If it's small data then it's not an issue to work directly on live site, but it's always good to work on staging site to be on safe side and test everything there before going live.
