About this Gig
Some dishes sell a lot and earn little. Others earn well but few guests order them. Menu engineering shows which is which, using your own sales and food costs, so you know what to price up, promote, rework or drop.
What I do
- Combine your sales report by item with the food cost of each dish
- Place every item in the menu engineering matrix: Stars, Plowhorses, Puzzles and Dogs
- Give clear actions for each group: price, position on the menu, portion or recipe
- Standard and Premium: price suggestions and a reusable Sheets or Excel file
- Premium: daily and monthly trends and a simple KPI dashboard
For hotels I can also analyse occupancy, ADR and RevPAR from your PMS exports. I work in hotel and event venue management, where these numbers are part of every week.
What I need: a sales report by item for at least one month (POS export or Excel) and the food cost or recipe of each dish. Not sure about your food costs? Message me first.

FAQ
Which POS or software do you work with?
Any system that exports sales by item to Excel or CSV. Most POS systems do. If yours only prints reports, send clear photos or PDFs and I will check them before you order.
I don't know my food cost per dish. Can you still help?
Yes, if you send recipes with quantities and your supplier prices; I calculate the cost per dish first. Message me before ordering so we size the package correctly.
How much sales data do you need?
At least one month, ideally three, so one busy weekend or an event does not distort the results. For the Premium trends, send daily sales for the period.
Is my data kept private?
Yes. Your sales and costs are used only for your report and are never shared. You can remove customer names from the export, since I only need items, quantities and prices.
