I set up GitHub Actions + fastlane with manual signing through an App Store Connect API key. Your certificates and profiles live in GitHub Secrets and are never printed in logs. You get a README that explains every secret and how to rotate it.
My own pipelines have pushed 235+ successful TestFlight builds across 11 repos, so I know the ugly failure modes, such as OpenSSL 3 .p12 files that macOS refuses to import.
