However after the new accessibility laws, it is now mandatory for Shopify stores to be accessible, that is, they should be easy accessed by audience with physical disabilities.

If I update the theme, will it remove the code changes ?
No, there is no link between theme updates and accessibility implementation. Theme updates only update installed theme files related to configuration etc while accessibility changes are related to User Interface and Front End code.
Do you use subscription based plugins to make store accessible ?
The process of making a website accessible is (30-40%) done using automated tools and (60-70%) through manual testing; so a plugin is never capable of making website accessible. The manual testing should be performed to fix all the errors as per WCAG 2 standards ( A, AA and AAA levels).
